Baked Oatmeal with Strawberries, Bananas & Chocolate

First up is this recipe for baked oatmeal. The whole family loved this! It reminded me of this recipe I made awhile back. Greg and I both commented that while the chocolate chips certainly didn’t hurt anything, we felt it would have been just as good without. The kids may not have agreed with that statement. I used the ingredient Chinese five spice for the first time and it had a really good, distinct, flavor. Very yummy and it makes your house smell wonderfully cinnamony.

Fresh Fruit Smoothie

I know, I know, what is so earth shattering about a smoothie? There are only 1 million smoothie recipes out there, right? Well this smoothie recipe contained some ingredients that, to me, sets it apart. Those two ingredients being Greek yogurt and the addition of a Carnation Breakfast Essentials French Vanilla Powder Drink Mix. We have recently discovered a new love for Greek yogurt. The kids included. The creaminess of Greek yogurt vs. regular yogurt simply cannot be beat. Especially when added to something like a smoothie. The Carnation Breakfast Essentials just provides more flavor and even more nutritional value. We enjoyed these smoothies as a mid-morning snack and ended up having to to post-pone lunch by about an hour as they were just so filling.

Creamy Caprese Pasta

Here is a super yummy pasta dish. Even though it is pasta, the ingredients that make the sauce are so light and fresh that it feels much healthier than your average pasta dish.

Cucumber, Tomato & Onion Salad

We loved this cucumber, tomato and onion salad and have enjoyed it several times over the past couple of weeks. My mom used to make a version of this salad but her recipe didn’t include tomatoes or parsley. Those two additions really add to it! Griffin LOVED this salad and truly couldn’t get enough. Carson wasn’t a fan. This makes a tremendous side to grilled foods.
